Pecan Pie in a bite size bar! Sometimes we want pie without all the work.  These gooey pecan pie bars from Gooseberry Patch Cookbook, Christmas Cookie Jar are extremely simple and so delicious.  Perfect for Thanksgiving dessert.

 

Pecan Pie Bars

For the crust:

18-1/2 oz pkg. yellow cake mix, divided

1/2 c. butter, melted

1 egg, beaten

1/2 c. brown sugar, packed

 

For the filling:

2/3 c. dry cake mix

1-1/2 c. light corn syrup

3 eggs, beaten

1 t. vanilla extract

1 c. chopped pecans

Set aside 2/3 cup dry cake mix for filling.  In a large bowl, combine remaining cake mix, butter and egg; mix well. Press into a greased 13″ x 9″ baking pan. Bake at 350 degrees for 15-20 minutes, until lightly golden; remove and set aside. 

In a large bowl, combine reserved cake mix, brown sugar, corn syrup, eggs and vanilla. Beat for 2 minutes with an electric mixer on medium speed.  Stir in pecans and pour over baked crust.  Bake for 30-35 minutes at 350 degrees, until almost set.  Cool; slice into bars.  Makes about 2 dozen
